This is one of my favorite traditional dishes here. And very easy. Cut up corn tortillas into little squares and fry them in hot oil til golden. Then put them in some Herdez green salsa that has been warmed. Take them out with a slotted spoon just so they aren't dripping with salsa. You just want them covered not necessarily soggy. Put them in a bowl and top with really whatever you like...I like shredded chicken with crumbled soft white cheese (cotija) and sour cream drizzled on top. This day I also had some tomato and avocado on it. You can also put shredded lettuce, olives...any kind of taco toppings. Serve with beans and rice for a fuller meal. ENJOY!
(No this is not low fat, sorry)

Katie,
i love that dish, too, although it was served differently at my work cafeteria! It was a breakfast dish with eggs, chees, green chilies and salsa on top. Hmmmm
We are soooo excited for you and Elias as the day is nearing. can't wait to welcome your new little one. We love you. Feliz Navidad!
